Homemade Chicken and Mushroom Sweet Chilli Pizza

Hey chommie 🤍

You know those days where you just want to sit down, talk, laugh a little louder than usual, and just be?

That was us last week. No fancy setup, no pressure, just good conversation, a few random ingredients, and vibes.

I had some chicken in the fridge, a bit of cheese, mushrooms that needed using, and honestly… I just said, let’s make pizza.

Not the perfect kind. The real kind. The kind you make with what you have.

And somehow, it turned into one of those meals you don’t forget. JOH, all I can say is I wish I had a friend like me because what do you mean I would get a random call "Hey friend, you keen on coming by for lunch" ehh only to find out my friend(Me) is making pizza from SCRATCH, what happened to hotdogs or something. Sbwl Ke Sana. But they deserve it, they have such big hearts really, amazing friends, sisters, really big ups to Lelo and Cindz, love them down. (Getting Mushy). 🍕 Served on a plate, Homemade Chicken and Mushroom Sweet Chilli Pizza

Serves: 4–6 people


🥖 Pizza Dough (Simple & Soft)

Ingredients:

  • 3 cups all-purpose flour
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 sachet yeast (10g)
  • 1 cup warm water
  • 2 tbsp oil

Method:

  1. Mix warm water, sugar, and yeast. Let it sit for 5–10 mins
  2. Add flour, salt, and oil
  3. Mix into the dough
  4. Knead for 8–10 mins until smooth
  5. Cover and let rise (1 hour)

🍗 Toppings (Your vibe, your rules)

  • Cooked chicken breast (seasoned with your favourite spices)
  • Cheddar cheese
  • Mozzarella cheese
  • Fresh tomato slices
  • Mushrooms
  • Caramelised onions
  • Sweet chilli sauce

🔥 Assembly

  1. Roll out your dough
  2. Spread sweet chilli sauce as your base or Tomato paste or Ketchup, Chom use what you have aneh 
  3. Add chicken, mushrooms, and onions
  4. Add tomato slices
  5. Top with cheddar + mozzarella
  6. Bake at 180°C for 15–20 mins

💡 Tips (don’t skip this)

  • Don’t overload toppings → soggy pizza
  • Pre-cook chicken properly
  • Mix cheeses for better flavour
  • Let pizza rest 5 mins before slicing

  • Calories: 350–450 kcal
  • Protein: 20–25g
  • Carbs: 40–50g
  • Fat: 12–18g
