What Happens When You Bake?

When you mix ingredients in a bowl, you create a batter or dough. But when that batter goes into the oven, something powerful happens heat changes everything.

Heat turns liquid into a solid

Your cake batter starts off soft and wet. Inside the oven:

  • eggs firm up

  • flour sets

  • sugar melts and caramelises

This is what transforms your batter into a cake.

Air bubbles make cakes soft

When you beat eggs or add baking powder, tiny air bubbles get trapped in your batter. In the oven, those bubbles expand, which makes your cake rise and become fluffy.

If there is not enough air, your cake becomes dense and heavy.

Sugar helps with colour and moisture

As sugar heats, it browns and gives your cake that golden colour. It also helps keep baked goods soft instead of dry.

Why this knowledge matters
