Understanding Sponge Cakes

Not all cakes are made the same way. Sponge cakes are different from butter cakes because they rely more on eggs for structure.

Swiss Roll Sponge

  • Thin and flexible

  • Made to be rolled while warm

Butter Sponge

  • Made by creaming butter and sugar

  • Heavier and richer

Genoise Sponge

  • Light like swiss roll sponge

  • Often used in layered desserts

    How to Tell If Your Cake Is Done

    Many beginners rely only on baking time, but ovens are not always accurate. Instead, you should learn how to read your cake.

    The Finger Test

    Press lightly on the top of your cake.
    If it springs back, it is done.
    If it leaves a dent, it needs more time.

    The Toothpick Test

    Insert a toothpick into the centre.
    If it comes out clean, your cake is baked.
    If it comes out with wet batter, it needs more time.

    Colour Matters Too

    A properly baked cake should be golden, not pale and not dark brown.
